How to eat this mustard ...

It's an excellent accompaniment for roast beef, ham, pork pies and sausages. It is also a useful ingredient in soups and stews.

Recipe

Leek and Mustard Tart
(Serves 4)

Ingredients:

  • 250 g short-crust pastry
  • 2 tablespoons unsalted butter
  • 500 g leeks
  • 2 large eggs
  • 150 ml crème fraiche
  • 2-3 tablespoons Shaken Oak Hot Mustard
  • 125 g goats' cheese
  • chopped chives
  • salt and pepper

Method

  • roll out the pastry and line a large tin
  • chill for 10-15 minutes
  • bake blind in a pre-heated oven at 200 C (400 F) Gas Mark 6 for 15 minutes
  • remove from oven
  • melt the butter in a saucepan and gently fry the leeks until tender
  • add a little water if necessary
  • beat the eggs in a bowl and then stir in the crème fraiche, mustard, leeks, cheese, chives and seasoning
  • pour the mixture into the pastry case and bake at 200 C (400 F) Gas Mark 6 for about 20 minutes until the top is golden brown
  • serve hot or cold with a green salad
